Smoky Salsa

We go through two jars of salsa every week. It is truly a breakfast, lunch, dinner and midnight snack for us. So we started making our own salsa a while ago to help cut down on costs. This past week, I decided to switch it up by roasting some of the vegetables first, and it made ALL the difference. This smoky, flavorful salsa is SO easy to make. Whip up a batch for the Big Game today!

Prep It

  • 10 cherry tomatoes
  • ½ onion, quartered
  • 1 jalapeño, deseeded & sliced in half
  • 3 cloves garlic, peeled
  • 1 can diced tomatoes
  • 1 small bunch of cilantro
  • 1 tsp adobo chili powder
  • ¼ tsp cumin
  • 1 lime, juiced
  • Salt & pepper

Make It

Preheat oven to 400°F. Line a baking sheet with SilPat or parchment paper. Roast cherry tomatoes, onion, jalapeño, and garlic for 15-20 minutes. Let cool for 15 minutes

Combine all roasted ingredients with the rest of the ingredients in a food processor. Blend until salsa meets your desired consistency. Add salt and pepper to taste. Add your favorite hot sauce for a bit more heat!
