Brussels Sprouts & Goat Cheese Tart with Balsamic Glaze

I was apprehensive about this recipe at first, but I just needed to find another way to eat brussels sprouts. Don’t get me wrong – I love a good roasted brussels sprout dish, but I needed to try something new. All this to say – I am SO happy with how this turned out. This will definitely be making an appearance at our first hosted gathering after the pandemic!

Prep It

  • ¼ cup shaved brussels sprouts
  • ¼ cup thinly sliced white onion
  • 1 sheet puff pastry
  • ¼ cup crumbled goat cheese
  • ¼ cup balsamic vinegar
  • 1 tsp honey

Make It

Preheat oven to 400°F.

Line a baking sheet with a SilPat or parchment paper and place puff pastry on top. Score a 1 inch border around the edge of the puff pastry. Inside your newly scored square, lightly puncture the dough with a fork in rows. This is to prevent the puff pastry from raising in the middle.

Bake puff pastry for 10 minutes. Add brussels sprouts and onions* in the scored square. Bake for 15 minutes.

While tart is baking, heat balsamic vinegar and honey on low until thickened.

After tart has baked 15 minutes, add crumbled goat cheese on top, and drizzle with balsamic honey mixture. Bake for 5 more minutes.

Allow to cool for at least 5 minutes, and cut in squares to serve.

*You may not use all brussels sprouts and onions. Fill the tart to your heart’s desire.
